A Sierra Nevada de Santa Marta, Colombia grower whose small lots are picked in multiple passes and dried slowly to protect what the altitude gives.
Q.What are you sending to the auction?
Caturra, Castillo, Typica, washed process, grown at 1300–2000 m. RFA-certified lot with sparkling malic acidity, green grape and honey. Exceptionally clean for a Supremo preparation.
Q.Who do you hope wins it?
A roaster who will put the farm's name on the bag and come back next season — the point of selling on evidence is building relationships that outlast one harvest.
