01THE INTERVIEW
“My grandfather sold on a handshake. I sell on a spectrum — and let the mountain do the talking.”
— LUCIA MENDOZA, LIRIO DE MAYO
Q.Tell us about the farm.
A Tolima, Colombia grower whose small lots are picked in multiple passes and dried slowly to protect what the altitude gives.
Q.What are you sending to the auction?
Caturra, Colombia & Castillo, Typica, washed process, grown at 1600–2300 m. Top-of-table Tolima micro lot: jasmine, apricot and sparkling acidity with an unusually long, sweet finish.
Q.Who do you hope wins it?
A roaster who will put the farm's name on the bag and come back next season — the point of selling on evidence is building relationships that outlast one harvest.
