What uncrack is

EGGSTONE is a data-science and AI company, founded in 2018 in Seoul, Korea. We measure coffee at every stage, green beans and roasted beans, and build the data and AI that connect them.

uncrack is where that work meets the market. The same engine that reads competition coffees and roastery samples now reads every lot on the floor.

An auction exists to discover differentiated quality, because difference creates value. A sensory score alone can’t explain that difference, prove it, or help reproduce it next season.

We scan every lot. Then we analyze it.

Not a scoring tool but an intelligence. Near-infrared measurement reads the bean; EGGSTONE’s data and AI turn those readings into chemistry, taste potential and quality signals, built on years of paired measurements across green beans, roasted beans and the roast itself.
