01THE ORIGIN

Every lot in Colors of Nature arrives with the same file: a 16-component NIR chemistry read, a verified cupping score and the mill's own processing log. Huila, Colombia grew these coffees; the numbers let them speak for themselves before the gavel falls.

02IN THE MILL

Each lot is processed to the producer's own recipe — fermentation, drying and rest times are logged at the mill and travel with the lot's data sheet.

Harvest windows and moisture readings for this selection are listed per lot in the catalogue below.

We ferment for ninety hours and hope somebody notices. Now the chemistry is on the record before the gavel falls.
