Every lot in Honduras Next Generation Auction arrives with the same file: a 16-component NIR chemistry read, a verified cupping score and the mill's own processing log. Honduras grew these coffees; the numbers let them speak for themselves before the gavel falls.
Each lot is processed to the producer's own recipe — fermentation, drying and rest times are logged at the mill and travel with the lot's data sheet.
